He worked at Pearl Harbor. And then he decided to do this,\u201d JoAnn said. \u201cSo, our family \u2014 actually, family friends \u2014 was our real testers.\u201d<\/p>\n<p>At first, the hours were limited \u2014 partly because Ross kept his day job.<\/p>\n<div><\/div>\n<p>\u201cIt was open from 5 in the afternoon to 11 o\u2019clock because I kept my day job\u2026 right?\u201d he said. \u201cSomething to fall back \u2014 we don\u2019t know how it\u2019s going to go.\u201d<\/p>\n<p>Ross later transferred to Schofield, a move that helped make the Wahiaw\u0101 location work long-term.<\/p>\n<p>\u201cRight before we opened, I moved over to the Army side\u2026 to Schofield. So much better. No commuting,\u201d he said. \u201cThat\u2019s why we kind of stayed in Wahiaw\u0101.\u201d<\/p>\n<p>\u201cI told you this is my workout,\u201d JoAnn Shigeoka joked. \u201cMaking noodles is a workout.\u201d<\/p>\n<p>Up at 5:30 a.m. Tuesday through Saturday, the Leilehua High School sweethearts spend hours mixing, rolling, and portioning noodles at the eatery.<\/p>\n<p>\u201cIt takes roughly 3 to 4 hours, maybe daily so, everybody eat all your noodles,\u201d said Ross Shigeoka as he chuckled. <\/p>\n<p>JoAnn Shigeoka says the early-morning routine depends on what sold the day before and what needs to be replaced.<\/p>\n<p>The Shigeokas say their story is tied to an older North Shore saimin legacy: Ross\u2019 grandparents, Fujimatsu and Yoshie Nakai, who opened Nakai Saimin Stand in Hale\u02bbiwa in the 1950s.<\/p>\n<div><\/div>\n<p>\u201cMy grandpa\u2026 when he came to Hawai\u02bbi\u2026 the cousin had a saimin stand too,\u201d Ross Shigeoka said. \u201cAnd he wanted to work at the restaurant, and he said, \u2018No, you go open up your own.\u2019\u201d<\/p>\n<p>Read more <a href=\"https:\/\/hawaiimovinginsider.com\/?p=946\">Maui man pleads guilty as FBI, FAA warn against lasers aimed at aircraft<\/a><\/p>\n<p>For many customers, the order isn\u2019t complete without something on the side \u2014 like teri beef sticks or a burger, a recipe JoAnn created with her mother.<\/p>\n<p>\u201cAnd when we tried to get the recipe that his grandparents made, nobody knew it,\u201d JoAnn said. \u201cSo, it was like, \u2018OK\u2019\u2026 we just make what we make at home\u2026 and that\u2019s how it began.\u201d<\/p>\n<p>And if you\u2019re wondering why there are no French fries on the menu, the answer is simple: there\u2019s nowhere to put them.<\/p>\n<div><\/div>\n<p>\u201cThere\u2019s no place to put French fries,\u201d said Marilyn, JoAnn\u2019s sister. \u201cOur kitchen is so small, there\u2019s no room for a fryer\u2026 because that could be hazardous.\u201d<\/p>\n<p>Marilyn Ige has been part of Shige\u2019s since the beginning, and the Shigeokas said the family dynamic is part of what customers come back for.<\/p>\n<p>\u201cShe\u2019s like a fixture,\u201d JoAnn Shigeoka said. \u201cShe\u2019s our backbone, actually.\u201d Said Ross Shigeoka.<\/p>\n<p>For Ige, the stand is more than a workplace.<\/p>\n<div><\/div>\n<p>\u201cShige Saimin Stand is like a home\u2026 like a kitchen\u2026 and we\u2019re like family,\u201d she said.<\/p>\n<p>Customers say that feeling shows up in the food \u2014 and the way they\u2019re treated.<\/p>\n<p>\u201cIt\u2019s definitely an awesome place to come enjoy\u2026 familywise\u2026 even just to come and grab a burger,\u201d said Jackie Richardson of Wahiawa.<\/p>\n<p>\u201cIt\u2019s the quality and the ohana,\u201d said Steven Flores, who is a former Wahiawa resident.<\/p>\n<div><\/div>\n<p>After more than three decades, the Shigeokas say it\u2019s dedication and taking the chance that built what they have today.\u201cYou take the chance, you can rebuild.
