Executive Chef Colin Sato of Mugen at ESPACIO The Jewel of Waikiki joined HNN Sunrise Weekends to showcase a new morning menu, which features options spanning a range of budgets.
The new menu offers classic dishes prepared with local and globally sourced ingredients. Highlights include granola bowls with Greek yogurt, house-made wagyu bacon, a wagyu short rib loco moco, and daily fresh-baked pastries prepared by Mugen’s pastry chef, Sonja Oliveri.
In addition to the new breakfast launch, Chef Sato is inviting diners to an upcoming culinary collaboration with Chef Takuto Murota of Lature, a Michelin-starred restaurant in Tokyo.

The two chefs will partner to present an exclusive five-course dinner that highlights wild game (“gibier”) and seafood specialties. A central dish on the menu will be a signature fish Wellington, inspired by Chef Sato’s recent travels to Japan.
Reservations for the upcoming collaboration dinner can be made through OpenTable or directly on the restaurant’s website.
Mugen is an intimate, 34-seat fine dining concept and one of only two restaurants on Oʻahu to hold a consecutive Five-Star rating from the prestigious Forbes Travel Guide.
